Points of Pride
The Emerald is part of the School District of Philadelphia's Small School's Transition Project.
Aligned with the School Reform Commission's Declaration of Education goals, the project is designed to increase academic achievement, to increase graduation rates, to increase enrollment of graduating seniors in post-secondary programs, to provide safer and more orderly learning environments and to increase community collaboration.
The Small Schools Transition Project is based upon three tenets. (1) Creating high-performing small schools requires significant, sustained supports and efforts for long term success. (2) Creating high-performing small schools requires the on-going participation of stakeholders including faculty, students, parents, regional and central office staff as well as business, community and university partners. (3) With these supports and with continuous stakeholder involvement, smaller schools will result in increased equity, improved quality of curriculum and instructional delivery, higher levels of student achievement, higher co-curricular program participation, improved college and career guidance and better preparation for post-secondary education.
The Emerald's Culinary Arts program emphasizes workforce education. It introduces students to food service related math, safety and sanitation, basic nutrition, product and equipment identification and handling as well as basic food preparation. Students work in a state of the art facility learning classical and international cuisine, menu planning, food purchasing, cost control, food and beverage management, and advanced culinary techniques as they prepare for careers in food services.
Students develop hospitality and restaurant management skills as they operate the "Emerald Café", prepare and cater school-based, regional, district-wide and community events. Students learn the essentials of the restaurant and hospitality industry through theory classes and hands-on instruction.
